@RK-aus-S To change the default core of a system just go to the Emulationstation Menu (pressing Start), and follow the path:
Main menu - Advanced Settings - Advanced Emulator Configuration
And, choose the console and the options you want.

Exactly, we are changing the documentation due to several system updates, and to improve access / use for users.
Unfortunately, I have no way of making a quick and simple manual for a "more complicated" system like Arcade.
The most basic thing I can say: each MAME core has its corresponding ROMSET, and using the wrong ROMSET will cause performance problems and / or not even work. (Obviously the BIOS is important, but this is general, it is not something exclusive to MAME.)
I recommend that you research more about it, I know that it is a little complex but it is not as difficult as it looks (although it is not as easy as the other consoles). There are several unofficial tutorials, even on youtube, and there are several topics here on the forum that you can base yourself on.
My personal opinion: if you are not an Arcade fanatic, but just a casual player who wants to enjoy this system, use the Fbneo emulator, which also has a great performance, and is a little more practical. (Fanatics will hate me when they read this, as they care about details of each version of MAME, and which one has the most accurate emulation with the version they played in Arcades, but casual players don't care about that).
Well, I've now a general procedure to get Recalbox running on a Pimoroni Picade.
Because I think this could be a valueable information, I decided to finish this thread and to open a new and fresh one. So nobody has to read through all the posts in this thread to come to the solution.

As I understand, the Picade is build around the PI3, with an interface circuit own to Pimoroni.
Honestly, I think that you should arrive to make it run, but only with some basic knowledge of Recalbox internals.
My GBA Freeplay is about the same, use a CM3 instead of the PI3, an dedicated button and hat interface, but I am running Recalbox on it.
Means, if you anyway build the Picade, no reason to not try Recalbox. If you arrive to make it work with some problems on interface, there is hope. LCD Display^s and joystick/buttons can be adapted. We have the tools.
@rk-aus-s What is your Hardware (Rpi0,1,2,3,3 + / PC32,64)?
Which version of your Recalbox (the number of version please, "the newest version", "the latest version" is not a clear information)
Did you even create your Recalbox image, or downloaded a "ready image", or bought an image?

I've connected my wired Xbox360 controller, and now I'm able to talk/listen to "Navi"! (Yellow Y Button 🙂
The only thing I cannot find at the moment is to select the Save Slots with this controller? Even I press Hotkey + Up/Down within the N64 game "Zelda", nothing happens. Selecting a Save Slot within a MAME game works!
Is it possible that selecting Save Slots is depending which emulator I run?
