What about creating a subfolder in your roms/platform folder and mounting your bigger drive there?

you will need to know your UUID number prior to updating your grub.
use the command "lsblk -f" to produce a list of your mounted drives as well as their UUID's

search --no-floppy --fs-uuid --set=root ####-####
linux /boot/linux root=UUID=####-####label=RECALBOX console=tty3 quiet loglevel=0
initrd /boot/initrd.gz

I have my 1.4tb ROMS folder on my D drive, and just installed Recalbox on a usb stick, that stays in the back of the PC out of sight when I want Recalbox to boot up, and I just unplug it when I want Windows to boot so I can play regular PC games.

Could you try setting global.videomode=1280x1024 in recalbox.conf ?

If it does not work, could try modifying the file cmdline.txt in the RECALBOX partition by adding:

video=HDMI-A-1:1280x1024@60

at the end of the file. The file must contain only 1 line.
