J'ai dû reconfigurer le tout, mais bon, c'est reparti.
Je vais me faire une sauvegarde du fichier de config, comme ça je n'aurai pas à repartir de zéro si cela venait à m'arriver à nouveau.
Auto réponse, je viens de trouver la solution, si ça peux aider quelqu'un aussi:
Ouvrez le menu démarrer ou la commande Exécuter (Windows+R) et tapez la commande suivante pour ouvrir l’éditeur de stratégie de groupe locale :
gpedit.msc
Allez dans Stratégie Ordinateur local > Configuration ordinateur > Modèles d’administration > Réseau > Station de travail LANMAN, puis double-cliquez sur Activer les ouvertures de session invité non sécurisées et activez ce paramètre.
Bonjour, certains bios sont nécessaires pour la Dreamcast, mais si ils sont manquants, cela ne doit pas affecter la liste des jeux, uniquement quand on souhaite jouer à certains jeux.

Même souci sur mon bartop (RPi3b+) pour mes enfants, je démarre direct sur emulationstation.selectedsystem=lastplayed et il n'y a pas de musique, il faut revenir sur le menu principal (qui freeze d'ailleurs durant plusieurs secondes) pour avoir les musiques.
Après ce n'est pas rédhibitoire, donc pas signalé jusqu'à présent.
