I want to post some discovery I have made regarding the old issue above:
When I switched beetween differnent Bluetooth dongles for testing, I found out that the (too) high sensitivity seems only to be present with Broadcom-based Bluetooth controllers. Both tested internal Pi3 and external Asus Dongle are much too sensitive and both are Broadcom based.
When I use a Digitus Dongle, which is using a CSR chipset, it's fine - no more problems of steering much too heavy at Mario Kart for example!!
Further it doesn't matter which GamePad I use, PS4 DualShock, various 8Bitdo controllers,... It really seems to be the Chipset on Pi-side.
Can anybody confirm?

I want to announce that problem is also gone with latest beta. Tried with internal Bluetooth of Raspberry Pi 3 B+ (Broadcom) and works fine there.
