Help reading files on USB

Hi hopefully posted in right section. Clueless when comes to pi3 and too old, grumpy and impatient to learn Got a so called custom build for son's Christmas present and they missed off loads of games/platforms asked for mainly mame/final burn alpha/ coin op arcade machine games, and filled it with a lot of cr@p dont really want. Got nowhere with them I wont name and shame for now but might leave them a negative facebook review.
Downloaded a 8gb rom set and put on an usb stick problem is after booting off sd card and swopping the menu settings to "any external drive" and rebooting it seems to load in recalbox but wont recognise my controllers which are wireless Stoga wii u replicas so cant access menus and games on the usb.
Is there a way to open the original SD card on a windows 10 pc? when try it just asks me to format the sd card. If dragging game roms onto the sd card do you need the folder, artwork, anything else assuming its not a console already listed in menu like nes/zx spectrum/neogeo etc?
Alternatively is there a way to get the pi3 to boot up from the sd card load in the menus and settings and then read from the usb stick as a second drive rather than having to choose either one or the other at start up.
Also I dont have a usb keyboard or usb controller to plug into pi3 which limits how much I can tweak.
Any advice would be much appreciated and keep it in numties terms dont get all technical jargon with me haha

First, there is no support for custom images especially illegal ones (it's illegal to sell recalbox and even more to sell roms), please download the official version to get support for your controller problem.

No, you have to use network and/or WinSCP

yes if you want to display boxart and things like that, but you need to scrape your roms first.

Thanks for the info I will have a look at the official download, its the roms which were custom choice ie asked for zx spectrum. Is there such a thing as legal roms then apart from maybe pingpong from 1982 on a Abacus

@martin73 all vectrex roms are legal and free, beside that nothing except demos (scene or game)

Managed to figure out WinSCP and deleted some roms and added some new stuff. More a case of taking a gamble and not really knowing what I was doing but it seems to have worked. Need to sort artwork guessing via scraping system so will give that a go but the actual games work which is the main thing. 30+ years ago used to write games on zx spectrum or rather retype them out of magazines, and typed out pages of code to play Stranglers Golden Brown on a BBC computer at school in the 80s but those days are long gone haha
