The 8GB wont have any benefit. The best to use the rpi as a retrogaming system only is the 2GB, it can help only to read extracted ISOs only (ISO sizes are less than 2GB). There is no need to have so much ram for older systems.
PS: there is no Gamecube emulator on rpi4.
