Hi. I've been using Next Pixel Theme since 2019 and I always thought that the ZX Spectrum should have a Dizzy theme, the game I used to plays on my ZX Spectrum when I was a teen. Of course, it is not perfect but for a first attempt I am pleased with the final result.

Ignore the artifacts on the right of the screenshots, the theme is ok.

You can download it from here

It's compatible with the version 1.4 for Recalbox 7.0+ but i think with minor tweaks you can use it on version 2.1.
