Pour ceux qui rencontrent le même problème, je l'ai "résolu" (mes menus restent toujours non-pivotés du coup, en attendant un éventuel fix de Recalbox plus tard) en ajoutant un fichier :
".retroarch.cfg" à la racine de mon répertoire /roms/mame.
Contenu du fichier:
video_scale_integer = true
video_allow_rotate = true
video_rotation = 1
aspect_ratio_index = 0

Alors pour info : j'ai pu tester GigaWing et Sonic adventure 2. Je n'ai pas constaté de ralentissement. Par contre j'ai effectivement noté que le son saturait par moment : rien d'aussi grave que sur la première vidéo. Mais des grésillements notables. Il ne s'agit peut-être que d'une question de settings (j'ai vu qu'il y avait beaucoup de choix disponibles).
Après, je n'ai pas utilisé Flycast.
J'ai tenté de loader des roms arcades récentes (Dodonpachi Daiffukatsu et MuchiMuchi Pork), sans succès.
Un boulot de fou !
Le support RPi4 se fait clairement pas attendre pour rien. Au contraire ! On sent que quand il sera là, on en profitera dans les meilleures conditions !

Il faudrait essayer d'accéder à ce fichier dispsetup.sh et voir comment l'éditer.
@bugeyedcreepy Yeah I am really surprised that this is not at all worked on. There is so many old games in tate mode, I can't understand why this is not an option.
I guess we are not that many to ask for it ?
Anyway, I had to quit Recalbox because of that...
